Cajun Chicken (or Shrimp) Alfredo

  • 2 large chicken breasts (or 1 pound shrimp, peeled and de-veined)
  • 1 to 2 jars (15 ounce) alfredo sauce
  • 1 pound package fettucine noodles
  • 2 tablespoons vegetable or olive oil
  • 1 tablespoon butter
  • 1 teaspoon and 2 teaspoons Cajun seasoning, separated

Directions:

  1. Cook noodles according to the instructions on the box. (Note: You want the noodles to finish and be drained at roughly the same time as your sauce.)
  2. In a large skillet over medium-high heat, add oil and melt butter. Add chicken (or shrimp) and sprinkle over 1 teaspoon Cajun seasoning; cook until done. Remove chicken (or shrimp) from skillet but leave the juices. (For shrimp, I recommend removing just slightly before done.)
  3. Reduce to medium heat. Add alfredo sauce and 2 teaspoons of Cajun seasoning to skillet. Heat through. Add chicken (or shrimp) back to the sauce; heat for 1 to 2 minutes.
  4. Add sauce to noodles and serve.
