Cranberry Oatmeal Cookies

  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter or margarine, softened
  • 2/3 cup packed brown sugar
  • 2/3 cup granulated sugar
  • 2 large eggs, beaten
  • 2 teaspoons vanilla extract
  • 1 cup rolled oats (I’m guessing this can be substituted with oatmeal.)
  • 1 cup dried cranberries
  • 1 cup white baking morsels
  • 1 cup chopped pecans

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda, and salt.
  3. Cream butter, and add sugars, eggs, and vanilla.
  4. Mix in flour mixture and oats, followed by cranberries, morsels, and nuts.
  5. Drop by tablespoon onto greased or parchment paper-covered baking sheet.
  6. Bake for 8 to 10 minutes or until golden brown at edges.
  7. Remove to wire rack to cool.
