Black Bean & Corn Salad

  • 2 cans black beans, drained and rinsed
  • 1 can yellow corn, drained and rinsed
  • 1/2 medium (or 1 small) onion, finely chopped
  • 1/4 cup oil
  • 1/4 to 1/3 cup white or balsamic vinegar (balsamic recommended)
  • 4 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 to 1 teaspoon parsley
  • Optional: 1/2 bell pepper, chopped (red recommended)


  1. Add black beans, corn, onion, and optional bell pepper to a medium mixing bowl.
  2. In a separate bowl, whisk together oil, vinegar, sugar, salt, and pepper until salt and sugar dissolved.
  3. Pour oil mixture over corn and beans. Mix thoroughly.
  4. Chill at least 1 hour.
  5. Before serving, add parsley and stir.
