- 2 cans black beans, drained and rinsed
- 1 can yellow corn, drained and rinsed
- 1/2 medium (or 1 small) onion, finely chopped
- 1/4 cup oil
- 1/4 to 1/3 cup white or balsamic vinegar (balsamic recommended)
- 4 teaspoons granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 to 1 teaspoon parsley
- Optional: 1/2 bell pepper, chopped (red recommended)
Directions:
- Add black beans, corn, onion, and optional bell pepper to a medium mixing bowl.
- In a separate bowl, whisk together oil, vinegar, sugar, salt, and pepper until salt and sugar dissolved.
- Pour oil mixture over corn and beans. Mix thoroughly.
- Chill at least 1 hour.
- Before serving, add parsley and stir.
