- 8 cups popped corn
- 3/4 cups brown sugar
- 6 tablespoons butter
- 3 tablespoons corn syrup
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- Optional: 1 cup peanuts
Directions:
- Preheat oven to 300 degrees.
- Place popcorn (and peanuts) on a large baking sheet.
- Place brown sugar, butter, and corn syrup in a large sauce pan. On medium heat, bring to boil and cook additional 5 minutes. (Turn heat down if in danger of boiling over.)
- Stir in salt, baking soda, and vanilla.
- Pour mixture over popcorn (and peanuts). Stir carefully.
- Bake for 15 minutes.
- Remove and carefully stir.
- Bake additional 10 minutes.
- Use a spatula to remove caramel popcorn (and peanuts) from pan.
- Cool and store in ziplock bags.
