Caramel Popcorn

  • 8 cups popped corn
  • 3/4 cups brown sugar
  • 6 tablespoons butter
  • 3 tablespoons corn syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • Optional: 1 cup peanuts

Directions:

  1. Preheat oven to 300 degrees.
  2. Place popcorn (and peanuts) on a large baking sheet.
  3. Place brown sugar, butter, and corn syrup in a large sauce pan. On medium heat, bring to boil and cook additional 5 minutes. (Turn heat down if in danger of boiling over.)
  4. Stir in salt, baking soda, and vanilla.
  5. Pour mixture over popcorn (and peanuts). Stir carefully.
  6. Bake for 15 minutes.
  7. Remove and carefully stir.
  8. Bake additional 10 minutes.
  9. Use a spatula to remove caramel popcorn (and peanuts) from pan.
  10. Cool and store in ziplock bags.
