Four-Cheese Pimento Dip

  • 3 oz cream cheese
  • 8 oz (2 cups) extra sharp cheddar cheese, shredded
  • 8 oz (2 cups) extra sharp white cheddar cheese, shredded
  • 4 oz (1 cup) Gruyere cheese (or Swiss Cheese)
  • 1 cup mayonnaise
  • 4 oz jar diced pimento, drained
  • 1/2 cup finely chopped green bell pepper
  • 1/3 cup finely chopped onion
  • 1 small jalapeno pepper, stemmed, seeded, and minced
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • Optional: crumbled bacon, toasted pecans, or chopped green onion
  • Dippers: celery sticks, carrot sticks, pita chips, and/or crackers

Directions:

  1. Beat cream cheese in mixing bowl for 30 seconds.
  2. Gradually stir in other cheeses.
  3. Beat in mayonnaise.
  4. Stir in pimentos, bell pepper, onion, jalapeno, Worcestershire sauce, and cayenne.
  5. Optional: Stir in additional ingredients.
