Lemon Bars Deluxe

  • 2 cups and 1/4 cup all-purpose flour, separated
  • 1/2 cup (plus extra) powdered sugar
  • 1 cup butter, softened
  • 4 eggs, beaten
  • 2 cups granulated sugar
  • 1/3 cup lemon juice
  • 1/2 teaspoon baking powder

Directions:

  1. Preheat oven to 350 degrees.
  2. Sift together 2 cups flour and 1/2 cup powdered sugar.
  3. Cut in butter.
  4. Press into 9x13x2-inch pan.
  5. Bake 15 to 20 minutes until light brown. Remove from oven and set aside.
  6. Combine eggs, granulated sugar, and juice. Stir in remaining flour and baking powder.
  7. Pour over baked crust.
  8. Bake 25 to 30 minutes until light brown.
  9. Sprinkle powdered sugar over top. Cool. Cut into squares.
