- 1 to 2 tablespoons vegetable oil
- 2 medium chicken breasts, chopped
- 2 small to medium yellow sweet onions
- 2 to 3 tablespoons minced garlic
- 2 (4 oz) cans chopped green chilies
- 2 teaspoons ground cumin
- 1 teaspoon oregano
- 1 teaspoon ground red (cayenne) pepper
- 1/2 teaspoon salt
- 3 chicken bullion cubes
- 3 (15 oz) cans great northern (white) beans
- 4 oz Monterey Jack cheese, grated
- 1 cup hot water
- Optional: 1 (4 ounce) can mushrooms
Directions:
- In a large pot, add oil and heat over medium-high heat.
- Add onions and cook until starting to turn translucent. Add chicken, and cook through.
- Reduce heat to medium to medium-low. Add garlic, cumin, oregano, red pepper, salt, and bullion cubes and allow to bloom.
- Place water, 1 can beans, and optional mushrooms in blender; blend thoroughly.
- Increase heat to medium to medium high, and add green chilies, beans, and blended ingredients. Cook for 20 to 30 minutes, stirring occasionally.
- Reduce heat to low, and stir in cheese.
