White Chicken Chili

  • 1 to 2 tablespoons vegetable oil
  • 2 medium chicken breasts, chopped
  • 2 small to medium yellow sweet onions
  • 2 to 3 tablespoons minced garlic
  • 2 (4 oz) cans chopped green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon ground red (cayenne) pepper
  • 1/2 teaspoon salt
  • 3 chicken bullion cubes
  • 3 (15 oz) cans great northern (white) beans
  • 4 oz Monterey Jack cheese, grated
  • 1 cup hot water
  • Optional: 1 (4 ounce) can mushrooms

Directions:

  1. In a large pot, add oil and heat over medium-high heat.
  2. Add onions and cook until starting to turn translucent. Add chicken, and cook through.
  3. Reduce heat to medium to medium-low. Add garlic, cumin, oregano, red pepper, salt, and bullion cubes and allow to bloom.
  4. Place water, 1 can beans, and optional mushrooms in blender; blend thoroughly.
  5. Increase heat to medium to medium high, and add green chilies, beans, and blended ingredients. Cook for 20 to 30 minutes, stirring occasionally.
  6. Reduce heat to low, and stir in cheese.
