White Chicken Chili

  • 1 to 2 tablespoons vegetable oil
  • 2 medium chicken breasts, chopped
  • 2 small to medium yellow sweet onions
  • 2 to 3 tablespoons minced garlic
  • 2 (4 oz) cans chopped green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon ground red (cayenne) pepper
  • 1/2 teaspoon salt
  • 3 chicken bullion cubes
  • 3 (15 oz) cans great northern (white) beans
  • 4 oz Monterey Jack cheese, grated
  • 1 cup hot water
  • Optional: 1 (4 oz) can mushrooms

Directions:

  1. In a large pot, add oil and heat over medium-high heat.
  2. Add chicken, and cook through.
  3. Add onions, garlic, cumin, oregano, red pepper, salt, and bullion cubes. Cook until onions are translucent.
  4. Place 1 can beans and optional mushrooms in blender; blend thoroughly.
  5. Reduce heat to medium, and add green chilies, beans, and water. Cook for 20 to 30 minutes, stirring occasionally.
  6. Reduce heat to low, and stir in cheese.
  7. Serve warm with sweet cornbread.
