Chili (with beans)

  • 1-1/2 pounds ground beef
  • 1 pound mild bulk sausage
  • 3 medium sweet onions, roughly chopped
  • 1 bunch (about 1 cup) green onions, thinly sliced
  • 2 cans light kidney beans (no salt added)
  • 2 cans dark kidney beans (no salt added)
  • 6 cans diced tomatoes (no salt added)
  • 1/4 cup vegetable oil
  • 4 tablespoons chili seasoning mix
  • 1 tablespoon and 1-1/2 teaspoons salt, divided


  1. Combine 1/2 can light kidney beans, 1/2 can dark kidney beans, and 2 cans of tomatoes in blender. Blend until smooth, and set aside.
  2. In a large non-stick pot over medium-high heat, add oil, sweet onions, ground beef, sausage, and 1-1/2 teaspoons salt. Cook until beef and sausage are done. Do not drain.
  3. Reduce to medium-low heat. Add all remaining ingredients. Cook, stirring occasionally, until beans have softened and tomatoes have broken down.
