Cornmeal (Cornbread) Mix

  • 4 cups self-rising flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 cup vegetable shortening
  • 4-1/2 cups self-rising cornmeal

Directions:

  1. In a large mixing bowl, mix flour, sugar, and baking powder.
  2. Add shortening; mix well.
  3. Add cornmeal; mix well.

(Granny’s Note: Store in airtight container. Will keep about 3 months. For reference, Jiffy mix contains 1-2/3 cups per package.)
