Mexican Cornbread

  • 1 cup self-rising flour
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 15 oz can corn, creamed or whole kernel
  • 3/4 cup milk
  • 2 eggs
  • 3/4 cup grated cheese
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 2 or 3 hot peppers, chopped

Directions:

  1. Preheat oven to 375 F.
  2. Pour all ingredients into bowl; mix well.
  3. Pour into oiled or greased 9×9-inch baking dish.
  4. Bake until golden.
