- Preheat oven to 425 F. Line 15x10x1-inch baking sheet with foil; coat with cooking spray.
- In a bowl, toss vegetables with 1-1/2 teaspoons olive oil, 1/4 teaspoon kosher salt (1/8 teaspoon table salt), and 1/8 teaspoon freshly ground black pepper.
- Follow directions below for the specific vegetable.
- Transfer to prepared pan. Arrange in a single layer on the pan.
- Roast for recommended cooking time below, turning once halfway through.
Vegetables:
- Red Potatoes
- Halve or quarter potatoes
- Cook Time: 25 to 30 minutes
- Recommended Seasoning: Toss with 1/4 teaspoon ground chipotle chile pepper just before serving
- Squash and Zucchini
- Halve lengthwise, slice 3/4-inch thick
- Cook Time: 20 to 25 minutes

- Peel, halve, and/or quarter

- Trim, halve
- Cook Time: 15 to 20 minutes

- Broccoli
- Cut into 2-inch long stalks
- Cook Time: 15 to 18 minutes

- Sweet Potatoes
- Scrub unpeeled potatoes, cut into 1-inch cubes

- Snap off woody base, cut into 3- to 4-inch pieces.
