Hot Brown Sandwiches

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 3/4 cup 2% low-fat milk, heated
  • 1 egg yolk
  • 2 tablespoons and 2 tablespoons grated Parmesan cheese, divided
  • Pinch coarsely ground black pepper
  • 4 slices white bread, toasted
  • 6 oz cooked turkey breast, thinly sliced
  • Paprika
  • 4 slices bacon, cooked
  • 2 small tomatoes, cut in wedges

Directions:

  1. Melt butter in a small saucepan over medium-low heat. Whisk in flour.
  2. Gradually stir in milk.
  3. Cook and stir over medium heat until sauce thickens and comes to a boil.
  4. Reduce heat to low.
  5. Add egg yolk, 2 tablespoons cheese, and pepper. Cook 2 minutes, stirring constantly.
  6. Heat broiler.
  7. Place 1 slice or on each of two ovenproof serving plates.
  8. Cut remaining toasts diagonally in half and arrange 2 pieces on either side of whole pieces on plates.
  9. Cover with turkey and pour sauce over tops.
  10. Sprinkle with paprika and remaining 2 tablespoons of cheese.
  11. Broil until speckled brown and bubbly.
  12. Cross two pieces of bacon on top of each sandwich and sprinkle with tomatoes.
