- 1 tablespoon butter (or margarine)
- 1 medium onion, chopped
- 2 medium potatoes, peeled and cut into small cubes
- 1 can (2 cups) creamed corn
- 1/2 cup water
- 1/2 teaspoon salt
- Dash of pepper
- Bacon bits (or crisp bacon)
Directions:
- Melt butter, saute onions until tender.
- Add potatoes and water.
- Cover and simmer 20 minutes until potatoes are tender.
- Stir in milk, corn, salt, and pepper. Cook over medium heat until heated through.
- Sprinkle each serving with bacon bits or bacon.
