Split Pea Soup (Green)

  • 1 medium onion, diced
  • 1 tablespoon vegetable oil
  • 6 cups chicken broth
  • 1 lb dried split peas
  • 1 cup cubed cooked ham (or a ham bone)
  • Salt and pepper to taste (salt according to how salty ham and broth is)

Directions:

  1. Saute onion in oil in large pot until tender.
  2. Add all other ingredients.
  3. Bring to boil, reduce heat.
  4. Cover and simmer about 1 hour until peas are tender.
