Cheeseburger Salad

  • 2 hamburger buns
  • 1 small red onion, chopped
  • 2 plum tomatoes, chopped
  • 3/4 lb ground beef
  • 1/2 cup dill pickles, diced
  • 3/4 cup catsup
  • 1 tablespoon yellow mustard
  • 8 cups lettuce, chopped
  • 1 cup (4 oz) shredded cheddar cheese

Directions:

  1. Preheat oven to 425 F.
  2. Cut buns into 1/4-inch strips or cubes. Bake 8 to 10 minutes. Set aside to cool.
  3. Cook ground beef. Add 1/2 of onion and 1/2 or tomatoes, pickles, catsup, and mustard. Mix well.
  4. To Serve:
    1. Arrange lettuce on plates.
    2. Top with beef mixture, then reserved tomato and onion.
    3. Sprinkle with cheese, and serve croutons on side.
