7-Up Pound Cake

  • 3 cups cake flour, sifted twice (measured after first sifting)
  • 3 cups sugar
  • 1/2 cup vegetable shortening
  • 2 sticks margarine
  • 10 oz 7-Up
  • 5 eggs
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 F.
  2. Combine margarine, shortening, and sugar in bowl; mix well.
  3. Add 1 egg and beat mixture. Repeat until all eggs added.
  4. Mix 7-Up and vanilla extract in a separate bowl.
  5. Add flour and 7-Up/vanilla extract alternately to mixture, mixing between.
  6. Pour mixture in tube pan.
  7. Bake for 45 minutes. Reduce heat to 300 F; bake addition 35 minutes or until done.
