- 1 cup rolled oats
- 1 cup buttermilk (or sour milk)
- 1/3 cup vegetable shortening and butter (some of each)
- 1/2 cup light brown sugar
- 1 egg
- 1 cup plain flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Directions:
- Soak oats in milk for 1 hour.
- Preheat oven to 400F.
- Mix shortening, sugar, and egg in a bowl.
- Blend dry ingredients.
- Pour about 1/4th of the dry mixture into the bowl and stir.
- Pour about 1/4th of the oats and milk into the bowl and stir.
- Repeat steps 5 & 6 until all ingredients are combined and stirred.
- Fill each space in a greased 12-muffin tin to 2/3rds with mixture.
- Bake for 20-25 minutes.
