Oatmeal Muffins

  • 1 cup rolled oats
  • 1 cup buttermilk (or sour milk)
  • 1/3 cup vegetable shortening and butter (some of each)
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions:

  1. Soak oats in milk for 1 hour.
  2. Preheat oven to 400F.
  3. Mix shortening, sugar, and egg in a bowl.
  4. Blend dry ingredients.
  5. Pour about 1/4th of the dry mixture into the bowl and stir.
  6. Pour about 1/4th of the oats and milk into the bowl and stir.
  7. Repeat steps 5 & 6 until all ingredients are combined and stirred.
  8. Fill each space in a greased 12-muffin tin to 2/3rds with mixture.
  9. Bake for 20-25 minutes.
