Hearty Italian Sausage Soup

  • 1 lb Italian Sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 (qty) 14.5 oz cans fat-free reduced-sodium chicken broth
  • 1 soup can water
  • 15 oz can cannellini beans, rinsed
  • 14.5 oz can stewed tomatoes, undrained
  • 1 cup rotini pasta, uncooked
  • 1-1/2 cups baby spinach leaves
  • 1/2 cup shredded reduced-fat mozzarella cheese
  • PREMIUM Saltine Crackers


  1. Cook sausage, onions, and garlic in oil in large saucepan 10 minutes, stirring frequently.
  2. Add broth, water, beans, and tomatoes.
  3. Bring to a boil.
  4. Stir in pasta; cook 8 minutes or until tender.
  5. Remove from heat.
  6. Stir in spinach; cover.
  7. Let stand 5 minutes.
  8. Top with cheese. Serve with crackers.
